Les Poissonchats Wondrous Advent Calendar – Lettuce

Mother says it was lambs lettuce, most definitely lambs lettuce. Lambs lettuce in the garden of the fairy next door except the fairy calls it Rapunzel, but it’s one and the same. Enchanted lambs lettuce for sure for the queen traded her unborn child against it, thinking she’d get away with it, but, alas, this is a fairytale, in fairytales, you never get away with anything and this is a good thing for otherwise Rapunzel wouldn’t have married the prince and we’d be the poorer for a good story. 

I love my Rapunzel with hard boiled eggs and honey vinaigrette:

What you’ll need

  • Fresh lamb’s lettuce
  • 2-3 hard boiled eggs
  • Sherry vinegar
  • Cold pressed rapeseed oil
  • Burgundy mustard
  • Honey

How you make it

Carefully wash the lamb’s lettuce in a big bowl of water, it often is sandy and the grits gather at the foot of the stems. Touch dry with a clean towel.

For the vinaigrette, add two parts of oil in the salad bowl, add one part of vinegar, a teaspoon of honey and a teaspoon of mustard, whisk until you get an unctuous sauce. Add the lamb’s lettuce. Chop the eggs into small cubes and add to the lettuce. Mix before serving. Alternatively you may arrange the lettuce in small bowls and serve.

How you eat it

With gusto, as it is full of really good things, also it’s green and fresh and quite extraordinary that it should grow so in the dead of winter!
